Tuna, tomato and sweetcorn savoury muffins

    These savoury muffins are perfect for a picnic, a starter or an accompaniment to a good homemade soup.

    Makes: 8 muffins

    • 1 (160g) tin tuna, drained
    • 1 (198g) tin sweetcorn, drained
    • 15 cherry tomatoes, halved
    • 1 shallot, minced
    • salt and ground black pepper
    • 1 teaspoon minced dill
    • 3 large eggs
    • 150g plain flour
    • 2 teaspoons baking powder
    • 2 tablespoons olive oil
    • 100ml milk

    1. Preheat the oven to 180 C / Gas 4. Grease 8 muffin moulds.
    2. Crumble the tuna into a bowl, stir in the corn, cherry tomatoes and shallot. Season with salt and pepper, and stir in the dill.
    3. In another bowl, beat the eggs, then beat in the flour, baking powder, olive oil and milk, just until the mixture is smooth. Stir in the tuna mixture. Pour the mixture into the prepared muffin moulds.
    4. Bake in the preheated oven until golden, about 25 minutes. Let cool for 5 minutes, then turn out of the moulds to cool completely.
