Sour cherry liqueur

    This delicious homemade liqueur requires some time but is worth every second of preparation! Don't discard the cherries afterwards. You can use them for desserts or coat in melted chocolate.

    Ingredients
    Makes: 2 litres

    • 2.5kg sour cherries
    • 2kg caster sugar
    • 1L vodka
    • 1L rectified spirit

    Method

    1. Wash cherries thoroughly, pit them (reserve 15 to 20 pits, they will add a slightly bitter taste to the liqueur). Place the cherries and reserved pits to a carboy or a large glass jar, add sugar and cover with a clean piece of muslin. Set aside in a warm place for a few days.
    2. Cherries will release their juices and the sugar will dissolve. To help this process, shake the carboy or stir the fruit with a clean spoon.
    3. Strain the juice through a muslin lined sieve. Leave the fruit in the carboy.
    4. Pour the juice into a saucepan and bring to the boil. Allow to cool.
    5. Remove the pits from the cherries and discard. Add vodka. Cover and set aside in a dark place for 2 weeks.
    6. Mix cooled juice with rectified spirit and pour into a bottle. Set aside.
    7. After 2 weeks, strain the cherries, Mix the vodka with the rectified spirit. Pour into clean bottles, cork and let rest for at least 3 months.

    Tip

    Polish rectified spirit (Spirytus Rektyfikowany) is a high percentage alcohol that can be found at specialty stores and online.
