About this recipe: A simple yet delicious dish of steamed cod in a parcel, flavoured with coconut milk and spring onions. Serve with freshly steamed jasmine rice and stir fried veg.


Serves: 4 

  • 2 (450g) fillets cod
  • 1 bunch spring onions
  • 1 (400ml) tin coconut milk
  • salt and ground black pepper to taste
  • chilli flakes to taste
  • garlic granules to taste

  1. Preheat oven to 200 C / Gas 6.
  2. Cut each fillet in half so that you have 4 portions. Place each fillet in the centre of a square piece of aluminium foil.
  3. Slice onions and sprinkle over fish. Pour a bit of coconut milk over each fillet and season with salt, pepper, chilli flakes and garlic granules to taste.
  4. Fold foil square corners towards each other in the centre and twist ends together to seal parcels.
  5. Place on baking tray and bake in preheated oven for 30 minutes.


If you want to make this more of a Thai-inspired dish, add some Thai basil leaves and a few dashes of fish sauce. You could even mix in a bit of your favourite Thai curry paste to the coconut milk before adding to the fish.
