4 oranges, peeled
3 or 4 tablespoons fresh orange juice
2 tablespoons chopped fresh mint
1 handful chopped almonds

Cut off both ends of the orange and remove as much white pith as possible. Segment the orange by running a sharp knife along the membranes separating each segment. Repeat with remaining oranges.
Put orange pieces in salad bowl, pour in orange juice and add mint and almonds. Mix well and chill until serving.
