Makes: 10 whoopie pies
For the biscuits
100g plain chocolate
3 1/2 tablespoons caster sugar
200g plain flour
1 teaspoon baking powder
1 pinch salt
For the buttercream
75g butter, cut into small pieces
100g icing sugar
1 teaspoon vanilla extract
1 tablespoon warm water

Preheat the oven to 180 C / Gas 4. Butter a baking tray.
To make the biscuits: Melt 75g butter and the chocolate in a casserole over very low heat. Set aside to cool.
Beat the egg with the caster sugar until pale. Whisk together the flour, baking powder and salt. Pour the melted chocolate into the egg mixture, and stir in the flour mixture a little at a time until well combined.
Divide the mixture into 20 equal pieces. Roll each into a ball, then flatten it slightly to make about 20 disks about 3 to 4cm in diameter and about 1cm thick. Place on the prepared baking tray.
Bake until a skewer inserted near the centre comes out clean, about 10 minutes. Cool on a wire rack.
To make the buttercream: Beat 75g butter with the icing sugar using an electric mixture until smooth. Beat in the vanilla extract and water with a wooden spatula.
When the biscuits are cool, put a generous tablespoon of buttercream on the top of one biscuit, then place another biscuit on top, like a sandwich. Repeat with the remaining biscuits and buttercream.
