Rita's Brazilian carrot cake with chocolate icing

    A gorgeous carrot cake that couldn't be easier to make! The chocolate icing is something deliciously different, and goes surprisingly well with carrot cake!

    Serves: 8 

    • 3 medium carrots, peeled and chopped (no more than 300g total)
    • 3 large eggs
    • 240ml vegetable oil
    • 400g caster sugar
    • 250g plain flour
    • 1 tablespoon baking powder
    • 1 pinch salt
    • Chocolate icing
    • 250ml milk
    • 200g caster sugar
    • 4 tablespoons cocoa powder
    • 1 tablespoon cornflour

      Carrot cake:

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20cm tube cake tin.
    2. In a blender mix together all of the cake ingredients, adding flour gradually.
    3. Pour the cake mixture into cake tin and bake in the preheated oven for 40 minutes. Let cool, remove from tin and serve.
    4. Chocolate icing:

    5. Mix all ingredients well and bring it to medium heat, stirring constantly, until the mixture thickens. Ice the cake once cooled.
