    About this recipe: A vegetarian Indian side dish of potatoes with spinach, gently cooked with an array of aromatic spices.

    Ingredients
    Serves: 3 

    • oil for frying
    • 1 teaspoon cumin seeds
    • 1 pinch asafoetida
    • 2 garlic cloves, minced
    • 1 green pepper, diced
    • 1 onion, minced
    • 1 teaspoon turmeric
    • 2 tablespoons curry powder
    • 1 teaspoon ground coriander
    • 1 tomato, diced
    • 200g spinach leaves
    • 1 potato, peeled and cubed
    • salt

    Method

    1. Heat a little oil in a frying pan, and cook and stir the cumin, asafoetida, garlic, green pepper and onion, until the onion is translucent, 2 or 3 minutes.
    2. Stir in the turmeric, curry powder, coriander and tomato. Add a small amount of water so that the spices do not burn. Let the tomato cook until it begins to break down, 2 or 3 minutes.
    3. Stir in the spinach and potatoes. Season with salt, cover and simmer, stirring occasionally, until the potatoes are tender, about 20 minutes.
