Tuna cucumber sushi

    It isn't as difficult as it seems to make your own sushi rolls. All you need is Japanese rice, dried seaweed and fresh tuna. Give it a try!

    Serves: 2 

    • 200g uncooked sushi rice
    • 250ml water
    • 3 tablespoons rice vinegar
    • salt, to taste
    • 1 pinch caster sugar
    • 2 sheets sushi nori (dried seaweed)
    • 1 tuna fillet, cut into thin strips
    • 1 cucumber, cut into long strips
    • 1/2 teaspoon wasabi paste
    • 50ml soy sauce

    1. Rinse the rice then drain. In a saucepan, combine the washed rice and 250ml water and bring to the boil. Cover, lower the heat and simmer until soft and fluffy (about 20 minutes). Add more water if necessary and stir occasionally. Remove from the heat then set aside to cool.
    2. Once the rice has cooled, mix in the rice vinegar then season with salt and a pinch of sugar.
    3. Place one sheet of nori on a bamboo sushi mat. Spread a 1cm layer of rice evenly on 1/3rd of the nori. On the rice arrange a line of tuna and cucumber strips. Roll the seaweed tightly with the help of the mat. Cut the roll into bite size pieces. Repeat with the other sheet of nori.
    4. In a small bowl, mix the wasabi paste with the soy sauce and serve with sushi.


    Be sure that the tuna fillet is sushi grade.
