    About this recipe: Wholesome soup with chicken meatballs and spinach. Lovely served on a cold day with some crusty bread.

    Ingredients
    Serves: 4 

    • 1 slice wholemeal bread
    • 250g chicken mince
    • salt and pepper, to taste
    • 1.5L water
    • 2 tablespoons butter
    • 1 onion, minced
    • 2 cloves garlic, minced
    • 2 potatoes, cubed
    • 1 teaspoon dried dill
    • 1 carrot, cubed
    • 250g fresh spinach, chopped

    Method

    1. Prepare the meatballs first by soaking the bread in a little water. Transfer to a bowl and mash with the hands. Add the chicken mince, season and mix well. Form into small meatballs.
    2. Bring 1.5L of water to the boil in a saucepan over a high heat. Add the meatballs to the water, reduce the heat and simmer for 15 minutes, until the meatballs are no longer pink in the centre.
    3. In a frying pan over a medium heat, melt the butter and add the onion, garlic and a little salt. Cook and stir until soft, about 4 to 6 minutes. Add to the soup.
    4. To the soup add the potatoes, dill and carrots and simmer for a further 10 minutes.
    5. Add the spinach at the very end. Mix thoroughly and cook for another minute to let spinach soften. Ladle into warmed bowls and serve immediately.
