About this recipe:These cheese and ham filled crepes are an elegant starter and a perfect way to kick off a special dinner party.
For the crepes
3 tablespoons caster sugar
1/4 teaspoon salt
125g plain flour
3 tablespoons olive oil
For the filling
2 tablespoons olive oil
1/2 onion, minced
250g cheese of your choice, grated
150g ham, finely chopped
chopped fresh dill, to taste
pepper, to taste
a few spring onions

Preheat the oven to 180 C / Gas 4.
For the crepes:
Using a food processor, blender or handheld liquidiser combine the milk with the eggs and pulse until smooth. Add the sugar, salt, flour and oil and pulse until well mixed and lump free.
Warm a little oil in a large frying pan over a high heat. When hot, place about half a ladle full of the mixture into the frying pan then immediately tilt the pan all around to spread out the mixture. As soon as the crepe bubbles, flip over an cook the other side very quickly, just until golden brown. Remove from the pan and keep warm. Repeat with the rest of the mixture until used up.
For the filling:
In a separate frying pan, warm the oil then add the onions and cook and stir until soft, about 4 to 6 minutes.
In a bowl, combine the cheese, ham and dill. Add the onions and pepper and mix.
Divide the filling equally between the crepes and spoon into the centre. Raise the crepe edges, bring together and tie with spring onion to make a parcel.
Bake the crepes in the oven for 5 to 7 minutes, until the filling melts and the crepes become golden brown. Remove from the oven and serve.
