About this recipe: This delicious fried cod recipe is full of flavour, and only uses one pan - so less washing up! Serve with a nice fresh, crisp salad.


Serves: 4 

  • salt and pepper, to taste
  • 500g boneless cod fillets, cut into small chunks
  • 2 tablespoons plain flour
  • 2 tablespoons olive oil
  • 3 tomatoes, sliced into thin rounds
  • 3 tablespoons pesto
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley

  1. Season the cod and dredge lightly in flour.
  2. Warm the oil in a frying pan over a medium heat then add the fish and fry for a few minutes on each side, or until the fish flakes easily with a fork. Transfer to a plate.
  3. Into the same frying pan, add the tomato rounds, increase the heat to high and cook for 2 minutes on each side, sprinkling in some salt.
  4. Return the fish to the pan, reduce the heat to low and and arrange carefully on top of tomatoes. Over the top, drizzle the pesto, and lemon juice then sprinkle in the parsley. Cook covered for a further 2 minutes. Remove the lid and serve immediately.
