Chicken livers with tomato-pesto sauce

    Chicken livers are packed with flavour. In this light dish, they are cooked with ripe tomatoes, sherry and pesto sauce. Serve with rice or pasta for a more filling meal.

    Serves: 4 

    • 500g chicken livers, chopped into bite-size pieces
    • 2 tablespoons flour
    • 2 tablespoons olive oil
    • 1 onion, very finely chopped
    • 3 tomatoes, finely chopped
    • 3 tablespoons sherry
    • 3 tablespoons pesto sauce

    1. Toss chopped liver in 2 tablespoons of flour.
    2. In a large frying pan, heat oil over medium heat. Add onion and cook until softened and starting to turn golden in colour. Stir in chicken livers.
    3. Add chopped tomatoes, sherry and pesto. Cook for 5 minutes before seasoning with salt and pepper to taste.
