Potato gratin with cod and mushrooms

    This is a gratin for a main course: potatoes are boiled then baked with mushrooms and cod fillet topped with cheese.

    Serves: 4 

    • 3 to 4 potatoes
    • 1 onion, minced
    • 2 tablespoon olive oil
    • 200g closed cup chestnut mushrooms, sliced
    • 300g fish fillet, cubed
    • 3 tablespoons capers
    • 2 tablespoons mayonnaise
    • 120ml milk
    • 100g grated cheese
    • salt and pepper to taste

    1. Cook potatoes unpeeled until tender.
    2. Preheat oven to 200 C / Gas 6.
    3. In a frying pan cook onion in olive oil. Add mushrooms and fry for another 5 minutes.
    4. Cut cooked potato into small cubes. In a bowl combine potatoes with fish, onion, mushrooms and capers. Add salt and pepper and gently stir to combine.
    5. Place in an ovenproof dish.
    6. In a small bowl stir 2 tablespoons mayonnaise with milk and pour over potatoes. Sprinkle with grated cheese.
    7. Bake until browned and bubbly, 35 to 40 minutes.
