Blueberry meringue pie

    A very simple blueberry pie with only four ingredients.

    Serves: 8 

    • 225g ready rolled puff pastry
    • 150g fresh blueberries
    • 4 egg whites
    • 200g caster sugar

    1. Preheat your oven to 200 C / Gas 6.
    2. Place puff pastry in a cake tin and trim the overhanging edges. Place blueberries on top.
    3. Whip egg whites with sugar until stiff peaks form. Evenly spread mixture over blueberries with egg whites. You can make a decorative pattern using a spoon.
    4. Bake until the meringue topping is golden, about 20 minutes.
