Avocado filled with smoked salmon salad

    If you are in a hurry you can put the salad in a regular salad bowl but it makes a nice presentation with it is served in avocado halves.

    Ingredients
    Serves: 2 

    • 1 tomato
    • 1/2 cucumber
    • 1 avocado
    • 2 slices smoked salmon
    • a few rocket leaves
    • a little minced fresh coriander
    • salt and pepper
    • lemon juice
    • 1 pinch paprika powder
    • 1 dash olive oil

    Method

    1. Dice tomato and cucumber.
    2. Cut avocado in half, and remove stone. Cut avocado flesh into segments but leave the skin intact. Carefully scoop out the flesh.
    3. In a bowl add all the veg, rocket and coriander. Add salmon, salt, pepper, lemon juice and olive oil. Toss gently.
    4. Fill the two empty avocado halves with the salad and dust with a pinch of paprika.
