Creamy chicken with grapes

    Sweet grapes pair beautifully with pan fried chicken in a creamy white wine sauce. Lovely served with rice and veg.

    Serves: 4 

    • 500g chicken breast pieces
    • 2 tablespoons butter
    • 1 tablespoon flour
    • 120ml cream
    • 120ml white wine
    • 100g seedless green or light purple grapes, halved
    • salt and pepper to taste
    • fresh herbs, such as thyme and parsley, chopped

    1. Melt butter in a pan over medium heat; add chicken and cook until lightly browned, about 3 to 5 minutes.
    2. Stir in 1 tablespoon of flour. Season with salt and pepper; stir in cream and cook until the sauce begins to simmer. Add wine and grapes; stir well and cook for a few more minutes until grapes warm through.
    3. Remove from the heat and let stand, covered, for a minute. Sprinkle freshly chopped herbs on top and serve.
