Summer vegetable couscous salad

    This Greek-style couscous salad is packed with ripe tomatoes, cucumber, spring onions and parsley. Lemon and garlic enhance the flavours even more!

    Serves: 4 

    • 120ml boiling water
    • 1 tablespoon butter
    • pinch salt
    • 100g couscous
    • 2 ripe tomatoes, diced
    • 1 cucumber, diced
    • 100g salad greens
    • 1 bunch spring onions, finely sliced
    • 1 bunch fresh parsley, finely chopped
    • salt and pepper to taste
    • 2 tablespoons lemon juice
    • 2 tablespoons olive oil
    • 1 clove of garlic, crushed

    1. Add butter and pinch of salt to boiling water. Pour couscous into boiling water and let stand, covered, for a few minutes until it absorbs all the water; fluff with a fork.
    2. Combine tomatoes, cucumber, salad greens, spring onion and parsley together in a bowl. Add couscous and mix carefully.
    3. Season with salt and freshly ground pepper. Combine olive oil and lemon juice in a small bowl; add crushed garlic. Mix well and pour over couscous salad; toss to combine.
