This Greek-style couscous salad is packed with ripe tomatoes, cucumber, spring onions and parsley. Lemon and garlic enhance the flavours even more!

Ingredients
Serves: 4
120ml boiling water
1 tablespoon butter
pinch salt
100g couscous
2 ripe tomatoes, diced
1 cucumber, diced
100g salad greens
1 bunch spring onions, finely sliced
1 bunch fresh parsley, finely chopped
salt and pepper to taste
2 tablespoons lemon juice
2 tablespoons olive oil
1 clove of garlic, crushed

Add butter and pinch of salt to boiling water. Pour couscous into boiling water and let stand, covered, for a few minutes until it absorbs all the water; fluff with a fork.
Combine tomatoes, cucumber, salad greens, spring onion and parsley together in a bowl. Add couscous and mix carefully.
Season with salt and freshly ground pepper. Combine olive oil and lemon juice in a small bowl; add crushed garlic. Mix well and pour over couscous salad; toss to combine.
