4 tablespoons olive oil
1kg roast beef
1 tablespoon Dijon mustard
1 tablespoon soy sauce
1 tablespoon white balsamic vinegar
1 bunch radishes
a few arugula leaves
60g salad sprouts

Preheat oven to 200 C / Gas 6.
Heat 1 tablespoon of the olive oil in a roasting dish. Brown beef on all sides. Cover and roast in the preheated oven for 20 to 25 minutes per 500g plus 25 minutes. Leave to rest for 10 to 20 minutes, then cut thinly with a slicer or an electric knife.
Set aside about 30 of the best berries. Crush the rest coarsely with a fork in a bowl. In another small bowl mix mustard, remaining olive oil, soy sauce and vinegar; add crushed raspberries.
Using a vegetable peeler, cut the radishes into long thin strips.
To assemble, place a few arugula leaves on small plates. Add a few slices of meat on each, 1 tablespoon raspberry sauce and garnish with radish strips. Cover and refrigerate till chilled. Just before serving, garnish each with a whole raspberry and some sprouts.
