Desserts with white chocolate are usually chocolate mousse, this recipe is different. White chocolate is added to a creamy soft flan served on pineapple and raspberries, which also makes a beautiful presentation.

180g white chocolate
60g butter, softened
100ml single cream
50g caster sugar
60g plain flour
6 slices fresh pineapple
50g fresh raspberries

Preheat oven to 180 C / Gas 4.
Break chocolate in pieces and place in a microwave safe bowl. Add 10g of the butter and the cream and heat in the microwave just until the chocolate is melted, about 1 minute.
In a bowl add sugar and eggs one by one while beating till the mixture is white and fluffy. Add flour and the remaining butternut then the chocolate. Mix well.
Butter 6 ramekins and distribue the mixture equally among them. Bake for 20 minutes for a melting consistency, or 30 minutes for a soft consistency. Note that the flan will set more as it cools.
Place a pineapple slice on each dessert plate and unmould the ramekins on top. Garnish with raspberries and serve while lukewarm.
