Baked chicken with garlic and ale

    A simple recipe of chicken drumsticks cooked on a bed of buttered onions with ale, garlic, thyme and paprika. Delicious with a serving of mash on the side.

    Serves: 4 

    • 500g chicken drumsticks or thighs
    • 2 onions, sliced
    • 1 tablespoon butter
    • 500ml dark ale
    • 2 cloves garlic, crushed
    • 2 bay leaves
    • 1/4 teaspoon thyme
    • 1/4 teaspoon paprika
    • salt and pepper to taste

    1. Preheat oven to 180 C / Gas 4.
    2. Melt butter in a oven-safe casserole pot over medium heat; add onions and brown in butter for a few minutes until softened.
    3. Add chicken drumsticks; cook until the skin starts to turn golden in colour, about 10 minutes.
    4. Add beer, crushed garlic, bay leaves, thyme and paprika. Season with salt and black pepper.
    5. Transfer the pot to the preheated oven and cook chicken for 35 minutes, or until cooked through.
