Summer cherry clafoutis

    Delectable summer dessert, which can be made with any kind of soft fruit. Clafoutis is a type of French dessert, something halfway between a pie and a cake, delicious served warm with some vanilla ice cream.

    Serves: 6 

    • 3 eggs
    • 100g caster sugar
    • 235ml double cream
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
    • 65g plain flour
    • 2 tablespoons butter
    • 300g cherries, stoned
    • icing sugar, to dust (optional)

    1. Preheat oven to 180 C / Gas 4. Lightly grease a baking dish with butter.
    2. In a bowl, whisk together the eggs, 70g of the sugar, cream, salt and the vanilla until creamy. Add the flour and whisk until smooth and lump free. Set aside for 10 minutes.
    3. Melt the butter in a saucepan over a medium heat and lightly brown the cherries. Sprinkle the remainder of the sugar on top. Once a syrup has formed, transfer to the prepared pie dish and carefully pour the egg and flour mixture over the top.
    4. Bake in the preheated oven for about 40 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and serve warm or allow to cool and serve dusted with icing sugar.

    Serving suggestion

    Serve warm – with soured cream, whipped cream, or ice cream.
