This dish emerged from my favourite cabbage and egg pie filling, that’s how much I love cabbage with egg!

4 tablespoons butter
1 head cabbage, grated
salt and pepper, to taste
2 tablespoons chopped fresh dill

Heat 2 tablespoons of the butter in a large lidded casserole dish over a medium heat. Add the cabbage then cook and stir for a few minutes.
Add the onion then lower the heat, cover and cook for about 30 minutes, stirring frequently. Add 2 tablespoons of butter halfway through the process.
Meanwhile, place the eggs in a saucepan of cold water then place over a high heat and bring to the boil. Reduce the heat and simmer for 7 minutes. Remove from the heat, drain then cover with cold water. Tap, peel then cut into cubes.
Season the cabbage near the end of cooking time then add in the eggs and mix well. Sprinkle with dill and serve hot.
