Fried cabbage and egg

    This dish emerged from my favourite cabbage and egg pie filling, that’s how much I love cabbage with egg!

    Serves: 4 

    • 4 tablespoons butter
    • 1 head cabbage, grated
    • 1 onion
    • 4 eggs
    • salt and pepper, to taste
    • 2 tablespoons chopped fresh dill

    1. Heat 2 tablespoons of the butter in a large lidded casserole dish over a medium heat. Add the cabbage then cook and stir for a few minutes.
    2. Add the onion then lower the heat, cover and cook for about 30 minutes, stirring frequently. Add 2 tablespoons of butter halfway through the process.
    3. Meanwhile, place the eggs in a saucepan of cold water then place over a high heat and bring to the boil. Reduce the heat and simmer for 7 minutes. Remove from the heat, drain then cover with cold water. Tap, peel then cut into cubes.
    4. Season the cabbage near the end of cooking time then add in the eggs and mix well. Sprinkle with dill and serve hot.

    Made as written and this turned out pretty good. I did use a bag of pre-shredded cabbage (coleslaw mix) so it had a few carrots in it but that only added to the finished dish. The cabbage had a nice brown on it and was super buttery but I prefer it a little crispier. Easy fix. Next time I'll just reduce the cook time.  -  03 May 2018  (Review from Allrecipes US | Canada)
