Easy tomato sauce

    This quick and easy tomato sauce is made with fresh tomatoes, yet ready in mere minutes. Mix up the type of herbs you use - other great options are parsley, oregano or basil. Use the sauce for almost anything - from topping pizza to pasta.

    Ingredients
    Serves: 4 

    • 600g tomatoes, quartered
    • salt and freshly ground black pepper to taste
    • 2 tablespoons olive oil
    • 1 clove garlic, chopped
    • 2 to 3 sprigs fresh thyme
    • 2 to 3 bay leaves

    Method

    1. Place tomatoes in a medium saucepan over high heat. Season with salt and pepper and let cook 10 minutes, stirring often.
    2. Purée tomato mixture with an immersion blender and add oil; mix well. Reduce heat to low and add garlic, thyme and bay leaf. Let simmer for 10 minutes, stirring occasionally.
    3. Remove bay leaves and thyme sprigs before serving.
