600g tomatoes, quartered
salt and freshly ground black pepper to taste
2 tablespoons olive oil
1 clove garlic, chopped
2 to 3 sprigs fresh thyme
2 to 3 bay leaves

Place tomatoes in a medium saucepan over high heat. Season with salt and pepper and let cook 10 minutes, stirring often.
Purée tomato mixture with an immersion blender and add oil; mix well. Reduce heat to low and add garlic, thyme and bay leaf. Let simmer for 10 minutes, stirring occasionally.
Remove bay leaves and thyme sprigs before serving.
