These chocolate shortbread biscuits, called 'Spitz' in French, taste a bit like Viennese whirls. You'll need a piping bag and tip, but other than that, they are easy to make.

Makes: 20 shortbread biscuits
200g butter, softened
75g icing sugar
2 teaspoons vanilla sugar
1 egg white
225g plain flour, sieved
150g dark chocolate

Preheat oven to 180 C / Gas 4. Line a baking tray with greaseproof paper.
Beat butter in a bowl with an electric mixer till creamy. Add sugar, vanilla sugar and egg white; beat for 1 minute. Add flour and mix until the flour is incorporated.
Place the mixture in a pastry bag fitted with a large round tip. Pipe 20 shortbread biscuits in the shape of a large "W" on the lined tray.
Bake for 12 to 15 minutes. Remove from the oven and let cool.
Break the chocolate into pieces and melt in a hot water bath. Dip one half of each biscuit in the melted chocolate and place on a wire rack till chocolate has set. Store the shortbread in an airtight biscuit tin.
