Smoked salmon, avocado and grapefruit nibbles

    This party nibble is also suitable if you have guests with gluten issues - instead of bread, the tiny sandwiches are made with smoked salmon.

    Makes: 12 bites

    • 6 slices smoked salmon, cut in 3 to 4cm squares
    • cream cheese, softened
    • 1 ripe avocado, thinly sliced
    • 1 pink grapefruit, peeled, pith removed and diced
    • a few sprigs of coriander
    • a few pink peppercorns, crushed


    1. In small plates layer a piece of salmon. Spread with cheese, and top with a slice of avocado, grapefruit, a few coriander leaves and another piece of salmon. Garnish with a coriander leaf and another piece of grapefruit and sprinkle with pink peppercorns.
