Makes: 12 bites
6 slices smoked salmon, cut in 3 to 4cm squares
cream cheese, softened
1 ripe avocado, thinly sliced
1 pink grapefruit, peeled, pith removed and diced
a few sprigs of coriander
a few pink peppercorns, crushed
In small plates layer a piece of salmon. Spread with cheese, and top with a slice of avocado, grapefruit, a few coriander leaves and another piece of salmon. Garnish with a coriander leaf and another piece of grapefruit and sprinkle with pink peppercorns.
