About this recipe: A versatile cheese spread that makes an easy party nibble. Delicious spread over fresh rye bread or crackers.


Serves: 6 

  • 200g quark, cream cheese or ricotta cheese
  • 4 tablespoons chopped walnuts
  • 2 tablespoons minced fresh dill
  • 2 tablespoons minced fresh parsley
  • 2 cloves garlic, crushed
  • salt to taste
  • 6 tablespoons buttermilk, or as needed

  1. Combine all ingredients except for the buttermilk in a food processor or a mortar and pestle. Pulse till well combined, then start adding the buttermilk a spoonful at a time till a spreadable consistency is reached.
  2. Refrigerate until ready to serve.


If you can find it, use farmers' cheese, a type of fresh white cheese popular in Russia and Eastern Europe.
