Egg and tomato toadstools

    Serves: 4 

    • 4 eggs
    • 1 tablespoon vegetable oil
    • 1 small onion, minced
    • 1 teaspoon mayonnaise
    • salt to taste
    • 4 small tomatoes

    1. Cook the eggs for 7 to 10 minutes in boiling water. Rinse under cold water and peel immediately.
    2. While the eggs are cooking, heat olive oil in a pan and fry until golden.
    3. Cut eggs in half width wise. Separate egg whites and yolks.
    4. Combine egg yolk with onion. Add mayonnaise and stir until creamy. Salt to taste.
    5. Spoon the mixture into the egg white halves.
    6. Cut tomatoes in half and place on the egg halves as caps. Dot mayonnaise on top of the caps to make them look like toadstools.
