Fettuccine with tomatoes, olives, and goat's cheese

    An easy, tasty vegetarian pasta dish – fettuccine pasta with fried tomatoes, olives and creamy goat's cheese.

    Serves: 4 

    • 250g fettucine pasta
    • 2 tablespoons butter
    • 2 tomatoes, cubed
    • 2 cloves garlic, chopped
    • 1/2 teaspoon dried oregano
    • 100g black olives
    • salt and pepper, to taste
    • 150g goat's cheese
    • 1 bunch spring onions, finely chopped

    1. Bring a saucepan of water to the boil over a high heat. Add the pasta and cook according to the instructions on the packet, or until al dente. Drain.
    2. In the meantime, melt the butter in a frying pan over a medium heat. Add the tomatoes, garlic and oregano and cook and stir for 1 to 2 minutes. Finally add in the olives and stir to incorporate.
    3. Combine the pasta with vegetables in the pan and brown lightly, season. Crumble the goat's cheese into the pan, combine with pasta and let melt a little. Sprinkle with spring onion and serve.

    Made this when some friends came today. Used slightly less pasta than in the recipe,(about 200 grams) as I thought it would be too much for the four of us. Apart from that, followed the recipe. It was a very nice change and had an excellant taste. I will try this again.  -  23 Apr 2015
