Spiced chicken thighs with lemon, garlic and olives

    Chicken thighs coated with cumin, paprika and turmeric are baked in the oven with lemon, garlic and olives.

    Ingredients
    Serves: 4 

    • 1 teaspoon ground cumin
    • 1 teaspoon paprika
    • 1 teaspoon ground turmeric
    • salt and pepper, to taste
    • 4 cloves garlic, minced
    • 800g chicken thighs or drumsticks
    • 2 tablespoons plain flour
    • 60ml lemon juice
    • 375ml chicken stock
    • 70g green olives, finely chopped
    • 70g black olives, finely chopped

    1. Preheat the oven to 160 C / Gas 3.
    2. Combine cumin, paprika, turmeric, salt, pepper and garlic in a bowl; toss chicken thighs or drumsticks in the spice mix and arrange in one layer in a baking dish.
    3. Whisk flour and lemon juice into chicken stock; pour stock over the chicken in the baking dish and scatter olives on top.
    4. Bake in preheated oven for 1 hour, or until chicken is cooked through and juices run clear.
