Ingredients
Serves: 4
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon ground turmeric
salt and pepper, to taste
4 cloves garlic, minced
800g chicken thighs or drumsticks
2 tablespoons plain flour
60ml lemon juice
375ml chicken stock
70g green olives, finely chopped
70g black olives, finely chopped

Preheat the oven to 160 C / Gas 3.
Combine cumin, paprika, turmeric, salt, pepper and garlic in a bowl; toss chicken thighs or drumsticks in the spice mix and arrange in one layer in a baking dish.
Whisk flour and lemon juice into chicken stock; pour stock over the chicken in the baking dish and scatter olives on top.
Bake in preheated oven for 1 hour, or until chicken is cooked through and juices run clear.
