Fried potatoes with mushrooms and soured cream


    Potatoes are pan fried in butter with mushrooms and seasoned with loads of garlic, fresh parsley and soured cream. A lovely side dish for pork chops.

    Serves: 4 

    • 6 new potatoes, medium-sized
    • 3 tablespoons butter
    • 250g button mushrooms, sliced
    • 4 tablespoons soured cream
    • salt and pepper to taste
    • 1 bunch parsley, finely chopped
    • 3 cloves of garlic, minced

    1. Cook potatoes in the microwave for 2 minutes. Slice into thin rounds.
    2. Heat butter in a pan. Add potatoes and cook until edges are crispy.
    3. Add sliced mushrooms and cook for a few more minutes.
    4. Add soured cream, salt and pepper; cover and cook for 5 minutes, adding the freshly chopped parsley and minced garlic in the last 2 minutes of cooking.
