Potatoes are pan fried in butter with mushrooms and seasoned with loads of garlic, fresh parsley and soured cream. A lovely side dish for pork chops.

Ingredients
Serves: 4
6 new potatoes, medium-sized
3 tablespoons butter
250g button mushrooms, sliced
4 tablespoons soured cream
salt and pepper to taste
1 bunch parsley, finely chopped
3 cloves of garlic, minced

Cook potatoes in the microwave for 2 minutes. Slice into thin rounds.
Heat butter in a pan. Add potatoes and cook until edges are crispy.
Add sliced mushrooms and cook for a few more minutes.
Add soured cream, salt and pepper; cover and cook for 5 minutes, adding the freshly chopped parsley and minced garlic in the last 2 minutes of cooking.
