Courgette ratatouille

    In the summer, when there is an abundance of courgette, we often add a lot of them to our ratatouille. Your choice of vegetables may vary depending on what you have on hand, you can also make it with mostly aubergine, or add peppers.

    Serves: 8 

    • 1 onion, minced
    • 2 cloves of garlic, minced
    • 3 carrots, chopped
    • vegetable oil for frying
    • 2 to 3 tomatoes, chopped
    • 500g courgette, peeled and cut into small cubes
    • 1 teaspoon salt
    • 1/4 teaspoon black ground pepper
    • 2 tablespoons tomato puree, to taste
    • 4 tablespoons minced parsley

    1. Fry onion, garlic, and carrots in vegetable oil for 5 minutes on low heat while stirring to prevent burning. Add tomatoes and fry for another 5 minutes, stirring constantly.
    2. Add courgette and fry for 5 minutes. Add salt, pepper and tomato puree. Mix, cover and simmer for another 10 minutes on low heat.
    3. Add parsley and serve.
