In the summer, when there is an abundance of courgette, we often add a lot of them to our ratatouille. Your choice of vegetables may vary depending on what you have on hand, you can also make it with mostly aubergine, or add peppers.

1 onion, minced
2 cloves of garlic, minced
3 carrots, chopped
vegetable oil for frying
2 to 3 tomatoes, chopped
500g courgette, peeled and cut into small cubes
1 teaspoon salt
1/4 teaspoon black ground pepper
2 tablespoons tomato puree, to taste
4 tablespoons minced parsley

Fry onion, garlic, and carrots in vegetable oil for 5 minutes on low heat while stirring to prevent burning. Add tomatoes and fry for another 5 minutes, stirring constantly.
Add courgette and fry for 5 minutes. Add salt, pepper and tomato puree. Mix, cover and simmer for another 10 minutes on low heat.
