Traditional Russian recipe for apple cake, called Sharlotka in Russia. It is light and low-fat, not very sweet and great with tea.

dried breadcrumbs for sprinkling
5 to 6 cooking apples
100g raisins (optional)
150g caster sugar
1 teaspoon vanilla extract, or to taste
cinnamon to taste (optional)

Preheat the oven to 180 C / Gas 4.
Grease a pie dish or square baking tin; sprinkle breadcrumbs over the bottom of the dish. Peel the apples, slice into wedges and arrange on top of the breadcrumbs in the tin. Sprinkle raisins on top of the apples.
Blend eggs and sugar in a food processor until white and fluffy. Keep blending, gradually adding the flour, cinnamon and vanilla extract. The cake batter should be the thickness of soured cream and runny.
Pour the cake batter on op of the apples and raisins. Bake for about 40 minutes or until a skewer inserted into the cake comes out clean.
