500g button mushrooms
1 onion, chopped
230g soured cream
150g cheese of your choice, grated
salt and pepper, to taste

Preheat the oven to 220 C / Gas 7.
Warm 2 tablespoons of the vegetable oil in a frying pan over a medium heat. Cut the mushrooms into quarters if they are large, if small just leave whole. Increase the heat to high and add the mushrooms, cook and stir until golden brown, about 6 to 8 minutes. Do not cook so long so that they begin to release a lot of liquid.
In a separate frying pan warm the remaining oil and cook and stir the onion until soft, about 4 to 6 minutes.
Add the soured cream to the mushrooms, mix well, and transfer to a casserole dish. Top with the onion, seasoning and grated cheese.
Bake in the preheated oven for about 15 to 20 minutes until the cheese has melted and is golden brown. Remove from the heat and serve.
