Herb-stuffed baked trout


    This is a lovely aromatic dish – trout, baked whole with fresh herbs and citrus fruit. You can use whatever herbs you like but fresh dill, parsley and rosemary work well.

    Serves: 4 

    • 1 (600g) whole trout, cleaned and gutted
    • 2 tablespoons vegetable oil
    • salt and pepper to taste
    • 1 bundle of fresh herbs, such as parsley, sage and dill
    • 1 lemon or lime, thinly sliced

    1. Preheat the oven to 200 C / Gas 6.
    2. Rub the fish with salt, pepper and olive oil.
    3. Rub the cavity with salt and stuff with herbs.
    4. Make a few slits in the skin on the back of the trout and stuff with lime slices.
    5. Arrange the fish on a baking tray and bake for 20-30 minutes. You can cover the fish with foil if it starts to brown too quickly.
