Herb-stuffed baked trout

    50 min

This is a lovely aromatic dish – trout, baked whole with fresh herbs and citrus fruit. You can use whatever herbs you like but fresh dill, parsley and rosemary work well.

    Serves: 4

    • 1 (600g) whole trout, cleaned and gutted
    • 2 tablespoons vegetable oil
    • salt and pepper to taste
    • 1 bundle of fresh herbs, such as parsley, sage and dill
    • 1 lemon or lime, thinly sliced

    1. Preheat the oven to 200 C / Gas 6.
    2. Rub the fish with salt, pepper and olive oil.
    3. Rub the cavity with salt and stuff with herbs.
    4. Make a few slits in the skin on the back of the trout and stuff with lime slices.
    5. Arrange the fish on a baking tray and bake for 20-30 minutes. You can cover the fish with foil if it starts to brown too quickly.

absolutely beautiful! Thank you for the great recipe. Husband and I loved it and we will be making it like this for a very long time. Great way to bring out the flavour of the fish  -  23 Jan 2019  (Review from Allrecipes US | Canada)

delicious. I did not have enough lemon so I opted to use it for afterwards instead of sticking it into the trout. Tasted great this way, too  -  07 May 2018  (Review from Allrecipes US | Canada)
