Tomato and goat's cheese puff pastry tart

About this recipe: A delicious and fragrant dish, I think this is way tastier than your regular pizza. Serve with a salad on the side to form a complete vegetarian meal.


Serves: 4 

  • 1 (250g) sheet frozen puff pastry
  • 1 tablespoon vegetable oil
  • 1 tomato, sliced
  • 1/2 teaspoon dried oregano
  • 50g roasted red peppers, sliced
  • 100g goat's cheese, crumbled
  • 50g cheese of your choice (e.g. Cheddar), grated

  1. Preheat the oven to 220 C / Gas 7.
  2. Leave the pastry to defrost for 30 minutes.
  3. Warm the oil in a frying pan over a high heat then add the tomatoes and sprinkle with oregano. Flip over and cook until just tender.
  4. Once defrosted, lay the pastry sheet on a baking tray or line a pie dish. Lay the tomatoes inside, followed by the peppers, goat's cheese and sprinkle with the grated cheese on top.
  5. Bake in the preheated oven for about 20 minutes, until the pastry is risen and golden and the cheese has melted. Remove from the oven and serve warm or allow to cool before enjoying.
