About this recipe: I love side dishes like this - tomatoes are simply baked with a little olive oil and seasoning. Serve alongside meat or vegetarian dishes for everything from breakfast to dinner.


Serves: 2 

  • 4 firm tomatoes
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • salt to taste

  1. Preheat the oven to 230 C / Gas 8.
  2. Cut tomatoes into 8 wedges each.
  3. In a mixing bowl, combine olive oil, oregano, paprika and salt. Add tomatoes and mix gently, so the oil covers the wedges evenly.
  4. Arrange on a baking tray and bake for about 25 minutes.
