About this recipe:
I love side dishes like this - tomatoes are simply baked with a little olive oil and seasoning. Serve alongside meat or vegetarian dishes for everything from breakfast to dinner.
4 firm tomatoes
4 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon paprika
salt to taste
- Preheat the oven to 230 C / Gas 8.
- Cut tomatoes into 8 wedges each.
- In a mixing bowl, combine olive oil, oregano, paprika and salt. Add tomatoes and mix gently, so the oil covers the wedges evenly.
- Arrange on a baking tray and bake for about 25 minutes.
