    Chicken thighs stuffed with rosemary and apples, and cooked in applesauce.

    Serves: 4 

    • 4 boneless chicken thighs with skin on
    • salt and pepper
    • 1 sweet apple such as Golden Delicious
    • 1 sprig rosemary, minced
    • 250ml applesauce

    1. Lightly beat the chicken thighs with a meat mallet.
    2. Rub inside and out with salt and pepper.
    3. Peel and core apples and cut into wedges. Place in the centre of each thigh piece. Add rosemary.
    4. Roll into a log and secure with toothpicks.
    5. Fry the roll-ups, constantly turning, in a hot frying pan. You won’t need to add any oil.
    6. After 15 minutes add apple sauce, a little salt and pepper. Cook for another 5 minutes.
