Tiramisu tartlets

    Mini tarts made with filo pastry, sweetened mascarpone cheese and cocoa to resemble the tiramisu dessert.

    Makes: 12 mini tarts

    • 6 sheets filo pastry, defrosted
    • 2 tablespoons butter, melted
    • 200ml cream
    • 1 teaspoon instant coffee granules
    • 100g caster sugar
    • 250g mascarpone cheese
    • 1 teaspoon cocoa powder or finely grated chocolate

    1. Preheat the oven to 200 C / Gas 6. Lightly grease a 12-hole muffin or cupcake tin.
    2. Brush deforested sheets of filo pastry with melted butter to prevent them from drying out as you work; slice pastry into squares to fit muffin holes.
    3. Lay pastry squares into holes to make baskets; trim the edges with scissors, if necessary. Bake pastry shells in preheated oven for 5-7 minutes, or until golden brown.
    4. Whip cream and caster sugar until well blended and slightly thickened; mix in mascarpone cheese and coffee granules until well blended.
    5. Spoon the mascarpone mixture into prepared filo baskets; sprinkle cocoa powder or finely grated chocolate on top.
