This delicious and unusual bean salad with herring is packed with flavour and is highly nutritious. This recipe calls for "soused herring" which is herring that has been preserved in a brine or other preserving liquid.
Rinse the beans. Bring a large saucepan of water to the boil and add the beans. Remove from heat and set aside for 2 hours. Bring to the boil again (in the same water), reduce the heat and simmer for 20 minutes until tender. Drain and set aside.
Meanwhile, soak the herring fillets in milk for 1 hour. Drain and cube.
In a bowl, combine all of the ingredients, stir in the mayonnaise and mix well until coated. Season with salt and pepper and serve.
