Chilli beef kebabs

    Beef cubes are seasoned with a garlic, lime and chilli rub, then grilled or barbecued on skewers, and served on warm tortillas.

    Serves: 4 

    • 400g beef fillet or sirloin steaks, cut into 2.5cm cubes
    • salt and ground black pepper
    • 1 tablespoon olive oil
    • 1/2 lime, juiced
    • 1 teaspoon chilli powder
    • 1/4 teaspoon ground cumin
    • 2 large garlic cloves, crushed
    • 1 large onion, sliced
    • 8 small flour tortilla wraps
    • For serving
    • 1 large tomato, chopped
    • 1/4 romaine lettuce, chopped
    • 4 tablespoons soured cream

    1. Season the beef cubes with salt and pepper and place them in a bowl or resealable plastic bag. Whisk together the olive oil, lime juice, chilli powder, cumin and garlic. Pour over the beef cubes and turn to coat them well. Let stand for 30 minutes at room temperature.
    2. Preheat the grill or barbecue. Thread the beef onto 4 skewers.
    3. Cook the beef under the grill or on the barbecue until tender, 7 to 8 minutes, turning frequently. Grill the onion slices alongside until soft and lightly charred. Towards the end of cooking, wrap the tortillas in aluminium foil and warm gently under the grill or on the barbecue, away from the direct heat.
    4. Chop the barbecued onion coarsely. Serve the kebabs with the warmed tortillas, onion, tomato, lettuce and soured cream.
