About this recipe: This pesto salmon is tasty and easy to make. Salmon fillets are topped with pesto, tomato slices and Parmesan cheese for a result sure to be savoured.


Serves: 2 

  • 1 bunch fresh basil, chopped
  • 3 cloves garlic, chopped
  • 4 tablespoons pine nuts, chopped
  • 85g grated Parmesan cheese
  • 4 tablespoons olive oil
  • 300g salmon fillet
  • 1 tomato, sliced

  1. Preheat the oven to 180 C / Gas 4. Grease a sheet of tin foil large enough to make a parcel around the salmon.
  2. In a bowl, combine the basil, garlic and pine nuts. Then mix in the Parmesan cheese and olive oil to form a pesto.
  3. Place the salmon on the prepared tin foil. Spread pesto thinly on top of the fish and top with tomato slices. Wrap the foil around the fillet and secure into a parcel.
  4. Bake for 15 to 20 minutes until the fish flakes with a fork and is an even pink colour throughout.


If you are short on time, prepare the pesto in a blender.
