About this recipe: This delightful cranberry walnut bread is easy to make and wonderful to have on hand. Cranberries and walnuts are such a delightful combination and are in perfect balance in this recipe.


Makes: 2 cranberry walnut bread loaves

  • 4 eggs
  • 340g caster sugar
  • 200ml vegetable oil
  • 120ml milk
  • 2 teaspoons orange zest
  • 1 teaspoon vanilla extract
  • 225g fresh cranberries, halved
  • 325g plain flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 60g walnuts, chopped

  1. Preheat the oven to 180 C / Gas 4. Lightly grease and flour two 900g loaf tins.
  2. In a large bowl, beat the eggs with sugar, oil, milk, orange zest and vanilla extract. Toss the cranberries in a little flour then stir into the cake mixture. Sift in the flour, baking powder and salt and mix until well combined then fold in the walnuts.
  3. Pour the cake mixture into the prepared loaf tins.
  4. Bake for 50 minutes until a skewer inserted in the centre comes out clean. Remove from the oven and allow the loaves cool fully before slicing and enjoying.


The loaves will keep for several days if stored in an airtight container.
