Chicken roulades with feta and spinach

    These delightful feta and spinach chicken roulades are flavourful and easy to make. Serve with bread, rice or pasta.

    Serves: 4 

    • 4 chicken breast fillets, halved
    • 1 teaspoon lemon juice
    • salt to taste
    • 100g feta cheese
    • 2 tablespoons natural yoghurt
    • 2 cloves garlic, minced
    • pepper to taste
    • 250g spinach - blanched, drained and chopped
    • 2 tablespoons olive oil
    • 340g passata

    1. Rinse the chicken breast fillets, pat dry and pound until thin. Drizzle with lemon juice and sprinkle with salt. Set aside.
    2. In a bowl, mix the feta cheese with yoghurt, stir in garlic and pepper to taste. Add chopped spinach, mix well.
    3. Spread the feta and spinach mixture thinly over each chicken breast. Roll up tightly and secure with kitchen string.
    4. In a frying pan, heat the oil and brown the roulades on all sides. Pour in passata, reduce heat, cover and simmer for 20 minutes.
    5. Transfer roulades to a serving platter. Remove the kitchen string, slice and serve with the sauce alongside bread, rice or pasta.

    Flavour tip

    Instead of passata, why not try using a jar of your favourite tomato pasta sauce?
