Truly chocolate cake

    Serves: 10 

    • Cake
    • 6 eggs, separated
    • 150g caster sugar
    • 1 cup cake flour
    • 3 tablespoons unsweetened cocoa powder
    • 50g plain chocolate, grated
    • Chocolate frosting
    • 400ml double cream
    • 100g caster sugar
    • 70g unsweetened cocoa powder
    • 50g bittersweet chocolate, grated
    • Icing
    • 100g unsalted butter
    • 100g icing sugar
    • 2 tablespoons unsweetened cocoa powder
    • 2 tablespoons milk

    1. Preheat the oven to 160 degrees C. Grease and flour a springform cake tin.
    2. Beat the egg whites with sugar until stiff peaks form. Mix in egg yolks.
    3. Sieve the flour and cocoa, add grated chocolate. Gradually stir into the egg mixture until combined.
    4. Pour the batter into the prepared tin. Bake for 45 minutes. Transfer to a wire rack to cool.
    5. Chocolate frosting

    6. In a saucepan, combine double cream, sugar and cocoa, bring to the boil. Remove from heat, add grated chocolate and mix well. Refrigerate for 2 hours.
    7. Beat the mixture until thickened.
    8. Cut the cake in half lengthwise. Spread the frosting on one half and cover with the other.
    9. Icing

    10. In a saucepan, over low heat, combine all ingredients until smooth. Allow to cool. Spread on top and sides of the cake. Refrigerate for a few hours.
