About this recipe: This delightful blue cheese and egg starter is full of the wonderful flavours of the blue cheese and pairs perfectly with the cool creaminess of the egg. Serve with a few salad leaves.


Serves: 5 

  • 5 hard boiled eggs
  • 150g blue cheese
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons mayonnaise
  • salt and pepper, to taste
  • 1 handful fresh cress, to garnish

  1. Peel and cut the eggs in half lengthways, gently removing the yolks. Place the whites on a serving plate cut side up.
  2. In a bowl, mash the egg yolks with a fork. Add blue cheese, butter and mayonnaise, mix well until smooth. Season with salt and pepper.
  3. Spoon the mixture into the egg whites. Garnish with the fresh cress. Serve chilled.
