5 hard boiled eggs
150g blue cheese
3 tablespoons unsalted butter, softened
2 tablespoons mayonnaise
salt and pepper, to taste
1 handful fresh cress, to garnish

Peel and cut the eggs in half lengthways, gently removing the yolks. Place the whites on a serving plate cut side up.
In a bowl, mash the egg yolks with a fork. Add blue cheese, butter and mayonnaise, mix well until smooth. Season with salt and pepper.
Spoon the mixture into the egg whites. Garnish with the fresh cress. Serve chilled.
