Blue cheese devilled eggs

    This delightful blue cheese and egg starter is full of the wonderful flavours of the blue cheese and pairs perfectly with the cool creaminess of the egg. Serve with a few salad leaves.

    Serves: 5 

    • 5 hard boiled eggs
    • 150g blue cheese
    • 3 tablespoons unsalted butter, softened
    • 2 tablespoons mayonnaise
    • salt and pepper, to taste
    • 1 handful fresh cress, to garnish

    1. Peel and cut the eggs in half lengthways, gently removing the yolks. Place the whites on a serving plate cut side up.
    2. In a bowl, mash the egg yolks with a fork. Add blue cheese, butter and mayonnaise, mix well until smooth. Season with salt and pepper.
    3. Spoon the mixture into the egg whites. Garnish with the fresh cress. Serve chilled.
