Pound cake whoopie pies

    These whoopie pies are not typical, but still, they respect the tradition. Originating in Amish country, whoopie pies were made with excess cake mixture. Here, I've made them with cake mixture from pound cake. I filled them with a cream cheese filling, but you can use a buttercream, mousse, nut butter, jam or anything you like.

    Makes: 30 whoopie pies

    • For the whoopie pies
    • 5 eggs
    • 250g caster sugar
    • 250g plain flour
    • 2 teaspoons baking powder
    • 250g butter, melted
    • For the filling
    • 125g cream cheese
    • 80g icing sugar

    1. Preheat the oven to 180 C / Gas 4.
    2. Whisk together the eggs and caster sugar until smooth. Stir in the flour, baking powder and melted butter and mix well. Fill buttered muffin moulds to a depth of no more than 5mm with the cake mixture.
    3. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 15 minutes. Unmould the biscuits and cool on a wire rack.
    4. Whisk the cream cheese with the icing sugar until smooth and creamy. Spread a teaspoon of filling between two biscuits. Eat immediately or store in the refrigerator.
