Lemon sponge slices

    These easy lemon sponge slices are sandwiched with lemon curd and can be topped with your favourite lemon icing, if desired.

    Serves: 6 

    • 200g butter, softened
    • 200g caster sugar
    • 5 eggs
    • 1 tablespoon lemon zest
    • 250g plain flour
    • 3 tablespoons lemon curd

    1. Preheat oven to 200 C / Gas 6. Line a rimmed baking tray or swiss roll tin with parchment and lightly grease.
    2. Cream together butter and sugar until the mixture turns white and is very light and fluffy.
    3. Incorporate the eggs, one at a time, then stir in the lemon zest.
    4. Add flour and mix until well combined. Beat until mixture is completely smooth and airy. Evenly spread out the cake mixture onto the prepare tin.
    5. Bake in preheated oven for about 12 minutes (adjust depending on thickness). Turn out immediately onto a clean tea towel, dusted with icing sugar, and remove the baking parchment.
    6. Once cool, spread with lemon curd.
    7. Cut in thirds lengthways, then horizontally to make slices. Sandwich together and serve!
